6 thick slices bacon, chopped
1 cup chopped yellow onion
2 cloves garlic, crushed

Soak beans overnight if preferred. Brown bacon in pan used for cooking beans. Place beans, onion, garlic, chile peppers and salt in pot. Cover with water about 3 inches above beans. Bring to a vigorous boil. Reduce heat to simmer. Place lid on, but do not cover completely. It normally takes 3 to 3 1/2 hours until beans are soft. Check about every 30 minutes. Tip: If you have leftover beans, add some broth to make a hearty bean soup the next day.
