Creamy Chicken & Broccoli
1 pkg (6ounces)stuffing mix, plus ingredients to prepare mix
1 can (2.8 ounces) Durkee French Fried Onions
1 pkg (10 ounces) frozen broccoli spears, thawed and drained
1 pkg (1 1/8 ounces) Durkee Cheese Sauce Mix
1 1/4 cups milk
1/2 cup sour cream
2 cups (10 ounces) cubed cooked chicken or turkey
Preheat oven to 350 degrees. In medium saucepan, prepare stuffing mix according to package directions; stir in 1/2 can French fried onions. Spread stuffing over bottom of greased 9-inch round baking dish. Arrange broccoli spears over stuffing with flowerets around edge of dish. In medium saucepan, prepare cheese sauce mix according to package directions using 1 1/4 cups milk. Remove from heat; stir in sour cream and chicken. Pour chicken mixture over borccoli stalks. Bake, covered at 350 degrees for 30 minutes or until heated through. Sprinkle remaining onions over turkey; bake uncovered 5 minutes or until onions are golden brown.
Makes 4 to 6 servings.
Cinammon Dinner Rolls
Dissolve in cup 1 pkg dry yeast, 1 Tbs sugar, 1 Tbs warm water and let set.
Cream 1/4 cup sugar, 1/2 cup shortening, 2 large eggs, add 1 cup warm water and yeast mixture. Sift 4 cups flour, 1 tsp salt, mix with rest in mixter. Let raise until double bulk, about 2 hrs. 1/3 to 1/2 square butter melted, in separate dish 1/3 cup sugar, 1/2 tsp cinammon .
Pinch dough, stretch about 4" long then dip into butter and then the sugar and cinnamon mix and roll around into well greased muffin tins and let raise 1 hr.
Bake 400 degrees for 10 to 12 minutes. Makes 2 dozen
Dad's Pinto Beans
2 pounds pinto beans, picked over and washed
6 thick slices bacon, chopped
1 cup chopped yellow onion
2 cloves garlic, crushed
2 dried red chile peppers, crushed
2 TBS kosher salt or sea salt

Soak beans overnight if preferred. Brown bacon in pan used for cooking beans. Place beans, onion, garlic, chile peppers and salt in pot. Cover with water about 3 inches above beans. Bring to a vigorous boil. Reduce heat to simmer. Place lid on, but do not cover completely. It normally takes 3 to 3 1/2 hours until beans are soft. Check about every 30 minutes. If water is needed, add only very hot water. Taste and add more salt if needed.
Tip: If you have leftover beans, add some broth to make a hearty bean soup the next day.

Eggs, Bacon & Hash Brown Quesadilla
Hash Browns - 1 large Idaho potato, scrubbed
4 TBS canola oil
1 small Spanish onion, halved and thinly sliced
Salt and fresh black pepper
1 TBS anchochili powder
Place potatoes in a medium pot of salted water. Bring to a boil and cool 3/4 through, 15 to 20 minutes. Drain, cool, peel, and coarsely grate.
Heat 2 TBS of oil in a large nonstick saute pan over medium heat. Add the onions, season with salt and pepper. Carmelize, stirring about 8 minutes. Transfer onions to a plate; return pan to heat.
Heat remaining 2 TBS of oil in the saute pan over high heat. Add the potatoes and cool, stirring occasionally, until golden brown. Stir in the ancho powder, onions, and salt and pepper; cook until warmed through.
Scrambled Eggs
1 TBS unsalted butter
4 large eggs
Salt and fresh black pepper
Melt butter in a nonstick saute pan over medium heat. Crack eggs into a bowl and whisk; season to taste. Cook, stirring with a spatula, until soft mounds form, 2 minutes. Set aside.
For Assembly
Eight 6-inch flour tortillas
1 cup grated low-fat Monterey Jack cheese
Hash browns
8 slices turkey bacon, diced and cooked until golden brown
2 TBS canola oil
1 tsp ancho-chili powder
Scrambled eggs
1/2 cup prepared mild salsa
Cilantro leaves, optional
Preheat oven to 425 degrees. Place 4 tortillas on a work surface. Divide the cheese, hash browns, and bacon among the tortillas. Top with the remaining tortillas, brush with oil, and sprinkle with the ancho powder.
Transfer quesadillas to a baking sheet. Bake until golden brown and cheese has melted, 8 to 10 minutes. Remove from the oven; cut quesadillas into quarters. Top each with some of the eggs and salsa. Garnish with cilantrol, if desired.
Serves 4.

ReplyDeleteI made the casseroll and roll tonight for supper. We rated the casseroll a 3 1/2 and I thought the rolls were a 5. I stretched the casseroll recipe with more chicken and broccoli. So Jennifer, for your family double the cheese sauce to pour over. I also bought the large onion mix. Jacob thought the rolls were more of a breakfast roll but I loved the sweetness with the casseroll. As you make the rolls, I took a big blob and stretched them to 4 to 5 inches long, then rolled in melted butter and then rolled in the cinammon and sugar. I then wrapped the roll around in the cupcake tin. So it looks like a coiled snake. Sorry, for the description. I loved the crunchie bottom of the roll. Good luck, I hope you like them.

ReplyDeletejust made mom's casserole! it was very good. we changed it a bit though. we didn't like the thought of a cheese sauce out of a package so we home-made one and it turned out really good! the only thing i would do different next time is more broccoli. we will definately make this again.

Made the quesadillas for breakfast- i cheated a bit- making hashbrowns from "scratch" the way he wanted takes forever- i bought hashrowns at the store with onion and peppers in it and saved a few steps- i eyeballed the chili powder- vic loved it and conner even ate some- however i "eyeballed" a little to much chili powder and made it a bit spicy. i think conner would have eaten more if i didn't get it so spicy. but we loved these and will certainly make again. 4.5 stars
ReplyDeletealso made the rolls and casserole- my rolls actually turned out! they were very sweet for a dinner roll, in fact i think i am going to add some glaze to the left over ones in the morning! they were awesome but i would make for breakfast and not really dinner. 5 stars on the rolls!
vic loves casseroles so this was right up his alley. however, we thought it could have used a little more flavor- maybe some sauted onions and garlic to the ckn mix. i too didn't even look for a cheese mix- i just added shredded cheese to it and it was great. vic gives it a 4 i rate it 3.5
i will trying the beans in the next few days too. thanks for the yummy recipes mom!

ReplyDeleteWe made the beans and rolls this weekend. I cooked the beans on Saturday to serve on Sunday with my Brisket. They were a little dry and I don't know if that is because I cooked them the day before or not. We rate the beans a 3.5. Then i also made the rolls. I prepared the dough before church and stuck it in the fridge and made them after. They turned out great. I also only put one side of the dough in the cinnamon and sugar mix. We devoured them they were great thanks mom. We rate these a 5. I hope to get to the casserole and breakfast burritos this week.

ReplyDeletemade the breakfast quesadillas today, only for lunch not breakfast. i left out the chilli powder and put in some fresh peppers from our garden. i love the frest veggies! it was great and we loved it!
